Ingredients

1 to 2 tablespoons olive oil1 tablespoon cider vinegar1 garlic clove, minced1 teaspoon dried thyme1/2 teaspoon dried oregano1/2 teaspoon cayenne pepper1/4 teaspoon saltDash pepper4 boneless skinless chicken breast halves (1 pound)SAUTEED SPINACH:1 green onion, finely chopped1 to 2 garlic cloves, minced1 to 2 tablespoons olive oil1/2 pound fresh mushrooms, sliced1 package (10 ounces) fresh spinach, torn

Preparation

In a large bowl, combine the first eight ingredients. Spoon over chicken. Grill, uncovered, over medium heat for 7 minutes on each side or until juices run clear.

In a large skillet, saute onion and garlic in oil for 1 minute or until crisp-tender. Stir in mushrooms; saute for 3-4 minutes or until tender. Add spinach; saute for 2 minutes or until wilted. Transfer to a serving platter; top with chicken.
