Ingredients
1-3/4 cups all-purpose flour1 cup crushed Rice Chex4 teaspoons baking powder1 tablespoon sugar1 teaspoon salt2 large eggs1-1/4 cups whole milk1/3 cup vegetable oil3 ounces cream cheese, cut into 1/4-inch cubes1/2 cup chopped green onions
Preparation
In a large bowl, combine the flour, cereal, baking powder, sugar and salt. In another bowl, whisk the eggs, milk and oil. Stir into dry ingredients just until moistened. Fold in cream cheese and onions.
Fill greased muffin cups two-thirds full. Bake at 400° for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm. Refrigerate leftovers.
