Ingredients
4 pounds loukaniko or other smoked sausage, cut into 1/2-inch slices1 each large sweet yellow, orange and red peppers, chopped1 large sweet onion, chopped2 cups beef stock1 whole garlic bulb, minced1 tablespoon minced fresh oregano or 1 teaspoon dried oregano1 teaspoon coarse sea salt1 teaspoon coarsely ground pepper3 to 3-1/2 cups cherry tomatoesHot cooked rice, optional
Preparation
In a 7- or 8-qt. slow cooker, combine sausage, sweet peppers, onion, stock, garlic, oregano, salt and pepper. Cook, covered, on low until vegetables are tender, 5-6 hours. Add tomatoes; cook until wilted, about 30 minutes longer. If desired, serve with rice.
