Ingredients
1/2 pound ground beef1/4 cup chopped onion1/4 cup chopped celery1 cup canned diced tomatoes, undrained3/4 cup beef broth3/4 cup cubed peeled potato1/4 cup thinly sliced carrot2 tablespoons uncooked long grain rice1/2 teaspoon salt, optional1/8 teaspoon pepper
Preparation
In a large saucepan, cook the beef, onion and celery over medium heat until meat is no longer pink; drain. Stir in the tomatoes, broth, potato, carrot, rice, salt if desired and pepper. Bring to a boil. Reduce heat; cover and simmer 40-45 minutes or until rice and vegetables are tender.
