Ingredients

1-1/2 cups all-purpose flour1 cup sugar3/4 teaspoon salt1/2 teaspoon baking soda1/8 teaspoon ground cinnamon2 eggs1/2 cup canola oil1/2 teaspoon vanilla extract1 can (15-1/4 ounces) sliced peaches, drained and finely chopped

Preparation

In a large bowl, combine the dry ingredients. In another bowl, combine the eggs, oil and vanilla; stir into dry ingredients just until moistened (batter will be thick). Fold in peaches.

Fill paper-lined muffin cups two-thirds full. Bake at 350° for 25-30 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
