Ingredients

2/3 cup butter, softened1/3 cup packed brown sugar1 large egg1 teaspoon vanilla extract3/4 cup self-rising flour1 teaspoon ground cinnamon1/8 teaspoon ground cloves1-1/2 cups quick-cooking oats1 cup shredded carrots1 cup shredded cheddar cheese1 cup chopped pecans1/2 cup raisins

Preparation

In a large bowl, cream butter and brown sugar until light and fluffy. Beat in egg and vanilla. Combine the flour, cinnamon and cloves; gradually add to the creamed mixture and mix well. Stir in remaining ingredients.

Drop by heaping tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 375° for 12-14 minutes or until golden brown. Remove to wire racks to cool. Store in the refrigerator.
