Ingredients

2/3 cup creamy peanut butter1/2 cup packed brown sugar1/4 cup sugar1/4 cup unsweetened applesauce2 large eggs, room temperature1 teaspoon vanilla extract1 cup gluten-free all-purpose baking flour1-1/4 teaspoons baking powder1 teaspoon xanthan gum1/4 teaspoon salt1/2 cup semisweet chocolate chips1/4 cup salted peanuts, chopped

Preparation

In a large bowl, combine the peanut butter, sugars and applesauce. Beat in eggs and vanilla until blended. Combine the flour, baking powder, xanthan gum and salt; gradually add to peanut butter mixture and mix well. Stir in chocolate chips and peanuts.

Transfer to a 9-in. square baking pan coated with cooking spray. Bake at 350° until a toothpick inserted in the center comes out clean, 20-25 minutes. Cool on a wire rack. Cut into squares.
