Ingredients

1/2 cup olive oil1/3 cup molasses2 teaspoons minced garlic1-1/2 teaspoons grated lemon zest4 salmon fillets (6 ounces each)

Preparation

In a small bowl, combine the oil, molasses, garlic and lemon zest; reserve half the mixture for serving.

Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill salmon, uncovered, over medium heat or broil 4 in. from the hear for 6-8 minutes on each side or until fish flakes easily with a fork, basting frequently with molasses mixture. Serve with reserved molasses mixture.
