Ingredients

1-1/2 pounds sweet potatoes, peeled and cubed1 medium apple, peeled and cut into 8 pieces2 tablespoons butter1 tablespoon lemon juice2 teaspoons minced fresh gingerroot1/2 teaspoon salt1/2 teaspoon pepperPORK:1 teaspoon water1/2 teaspoon cornstarch3 tablespoons maple syrup2 teaspoons wasabi mustard2 teaspoons soy sauce1/2 teaspoon pepper1-1/2 pounds pork tenderloin, cut into 1-inch slices 1 tablespoon olive oil2 garlic cloves, minced

Preparation

Place sweet potatoes and apple in a large saucepan with water to cover. Bring to a boil over high heat. Reduce heat to medium; cover and cook just until tender, 10-12 minutes. Drain. Mash potatoes and apple. Add the next 5 ingredients; keep warm.

Stir water into cornstarch until smooth; add syrup, mustard, soy sauce and pepper. Add pork; stir to coat.

In a large skillet, heat oil over medium heat. Brown pork. Add garlic; cook until meat is no longer pink, 3-5 minutes longer. Serve with sweet potatoes and pan juices.
