Ingredients

2/3 cup sugar1 cup unsweetened apple cider or juice2 tablespoons cider vinegar7 medium apples, peeled and chopped (about 7 cups)3 teaspoons apple pie spice2 teaspoons ground cinnamon2 packages (17.3 ounces each) frozen puff pastry, thawed4 cups confectioners’ sugar2 tablespoons butter, softened2 teaspoons vanilla extract1 to 2 teaspoons half-and-half cream

Preparation

In a large heavy saucepan, spread sugar; cook, without stirring, over medium-low heat until it begins to melt. Cook until melted sugar turns a medium amber color, stirring occasionally. Mix cider and vinegar; pour slowly into melted sugar (mixture will harden). Reduce heat; cook and stir until mixture returns to a liquid. Add apples and spices; toss to coat. Remove from heat; let stand, covered, until cooled.

Preheat oven to 400°. Drain apples; reserving juices. On a lightly floured surface, roll each sheet of puff pastry sheet into a 12-in. square. Cut each into four squares. Top each with about 3 tablespoons drained apple. Fold pastry over filling to form a triangle; press edges with a fork to seal. Place on greased baking sheets.

Bake until golden brown, 18-20 minutes. For glaze, mix confectioners’ sugar, butter, vanilla and reserved apple juices. Stir in enough cream to reach a thick drizzling consistency. Spoon over turnovers. Serve warm.
