Ingredients

1 egg1/2 cup finely crushed gingersnaps (about 11 cookies)1 teaspoon salt1-1/2 pounds ground beef1 cup ketchup1/4 cup packed brown sugar2 tablespoons Dijon mustard1/2 teaspoon ground ginger

Preparation

In a large bowl, combine the egg, cookie crumbs and salt. Crumble beef over mixture and mix well. Shape into 1-in. balls.

Place on greased racks in shallow baking pans. Bake, uncovered, at 350° for 15-20 minutes or until no longer pink; drain.

In a large skillet, combine the ketchup, brown sugar, mustard and ginger. Add meatballs. Simmer, uncovered, for 15-20 minutes or until heated through, gently stirring several times.
