Ingredients

6 c. all-purpose flour, plus more for surface

2 tbsp. baking powder

1 tsp. kosher salt 

1 tsp. grated nutmeg

3 large eggs, room temperature 

1 1/4 granulated sugar

1 tbsp. pure vanilla extract

6 tbsp. melted butter, cooled slightly

1 c. buttermilk, room temperature

Vegetable oil, for frying

3 c. powdered sugar

1/2 c. unsweetened cocoa powder 

Pinch kosher salt

1/3 c. milk

2 tsp. pure vanilla extract

Rainbow sprinkles, for garnish

Preparation

Step 1In a large bowl, stir together flour, baking powder, salt, and nutmeg.Step 2In a stand mixer, beat eggs and sugar until pale in color, about 5 minutes. Beat in butter and vanilla. On low speed, gradually add buttermilk and flour, and stir until totally combined. (The dough will be extremely soft.) Let dough rest in fridge until firm, about 30 minutes. Step 3Line the bottom of a large baking sheet with parchment paper and dust with flour. Pat dough into ½” thickness on top. Using a 9" cake pan as your stencil, cut out a large circle using a paring knife. Use a 3"-4" biscuit cutter to stamp out the middle. Leave donut on baking sheet and remove excess dough.Step 4 In a large roasting pan set over two burners, heat about 3” oil over medium heat until temperature reaches 350°. Carefully slide donut into oil and fry until golden all over, basting the top of the donut the whole time, about 10 minutes. Drain on a paper towel-lined baking sheet. Step 5In a large bowl, whisk together sugar, cocoa powder, and salt. Gradually stir in milk and vanilla until glaze is smooth and pourable. Pour glaze over doughnut then immediately garnish with sprinkles.

That said, this humungous donut was insanely delicious. It tasted like a giant version of an old-fashioned—the kind with the craggily crispy edges. We were all obsessed.  So, if you’d like to make this recipe at home, I recommend cutting it in half and making regular-sized donuts . Fry them (much more safely) as you would a regular donut. In a big pot, with maybe one bottle of oil and for about a minuter per side. No need to baste!
