Ingredients

1/4 cup chopped red onion1 garlic clove, minced2 teaspoons olive oil1 medium yellow summer squash, sliced1 medium zucchini, sliced1/2 cup sliced fresh mushrooms1 medium tomato, cut into wedges1/4 cup chopped celery1/2 teaspoon lemon juice1/4 teaspoon dried rosemary, crushed1/4 teaspoon dill weed1/4 teaspoon Italian seasoning1/8 teaspoon fennel seed1/8 teaspoon pepper

Preparation

In a large skillet coated with cooking spray, saute onion and garlic in oil until tender. Add the remaining ingredients; gently stir. Cover and cook over medium heat for 5-7 minutes or until vegetables are tender.
