Ingredients
3 eggs1-1/2 cups sugar1/2 cup canola oil1/4 cup unsweetened applesauce1 teaspoon vanilla extract2 cups all-purpose flour2 teaspoons baking soda1 teaspoon ground cinnamon1/2 teaspoon baking powder1/4 teaspoon salt2 cups shredded zucchini1 cup chopped dates1/2 cup chopped walnutsCARAMEL CREAM CHEESE FROSTING:10 caramels1 tablespoon water3 ounces reduced-fat cream cheese2-1/2 cups confectioners’ sugar1/8 teaspoon salt
Preparation
In a bowl, beat the eggs, sugar, oil, applesauce and vanilla. Combine the dry ingredients; add to the egg mixture and mix well. Stir in zucchini, dates and walnuts. Spread into a 13x9-in. baking pan coated with cooking spray. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.
In a saucepan, heat caramels and water over low heat until caramels are melted, stirring occasionally. In a bowl, beat cream cheese and confectioners’ sugar until smooth. Add caramel mixture and salt; mix well. Spread over cooled bars.
