Ingredients

2 c. organic long-grain brown rice

4 tbsp. organic canola oil

2 organic eggs

1 medium organic yellow onion

1 c. organic frozen green peas

2 tbsp. organic soy sauce

1 tbsp. organic dark sesame oil

2 tbsp. fresh organic cilantro

Preparation

Step 1Fluff and spread the cooked rice on a baking sheet and let it dry out for a half an hour.Step 2Heat 1 tablespoon oil in a large skillet for 15 seconds, add the eggs, and scramble them. Remove and set aside.Step 3Heat the remaining 3 tablespoons oil in a large skillet and cook the onions until they begin to brown.Step 4Add the peas, soy sauce, sesame oil, and cooked rice. Cook on medium heat, turning the rice mixture over from time to time (allow it to brown before turning), about 10 minutes. Stir in scrambled eggs and cook until heated through.Step 5Sprinkle with fresh cilantro and serve hot.
