Ingredients

2 cups fresh or frozen corn, thawed1 medium ripe avocado, peeled and diced1 small peach, peeled and chopped1 small sweet red pepper, chopped1 small red onion, chopped2 tablespoons olive oil2 tablespoons white wine vinegar1 tablespoon lime juice1-1/2 teaspoons ground cumin1 teaspoon minced fresh oregano1 garlic clove, crushedSalt and pepper to taste1 minced and seeded jalapeno pepper, optional Baked tortilla chips

Preparation

Combine first 11 ingredients; add salt and pepper and, if desired, jalapeno. Serve with tortilla chips.
