Ingredients

2 veal chops (1 inch thick)1/2 teaspoon saltDash pepper1 tablespoon canola oil1/2 cup chopped onion2 tablespoons butter, divided1/4 cup chicken broth1/3 cup dry bread crumbs2 tablespoons grated Parmesan cheese

Preparation

Preheat oven to 350°. Sprinkle veal chops with salt and pepper. In a skillet over medium heat, brown chops in oil on both sides. Sprinkle onion into a greased shallow baking dish; dot with 1 tablespoon butter. Top with chops; drizzle with broth. Melt remaining 1 tablespoon butter; toss with bread crumbs and Parmesan cheese. Sprinkle over top.

Bake, uncovered, until a thermometer reads 160°, 30-35 minutes.
