Ingredients

3 medium potatoes, peeled and cubed2 pounds beef stew meat4 medium carrots, sliced2 medium onions, sliced3 celery ribs, sliced2 cups tomato juice1 cup water1/3 cup quick-cooking tapioca1 tablespoon sugar1 tablespoon salt1 teaspoon dried basil1/2 teaspoon pepper

Preparation

Place the potatoes in a greased 5-qt. slow cooker. Top with the beef, carrots, onions and celery. In a large bowl, combine the remaining ingredients. Pour over the vegetables.

Cover and cook on low for 9-10 hours or until meat and vegetables are tender.
