Ingredients

2 packages (10 ounces each) frozen chopped spinach, thawed and drained1 pound flounder fillets3 tablespoons chopped onion2 tablespoons butter3 tablespoons all-purpose flour1/4 teaspoon salt1/4 teaspoon pepper1/8 teaspoon ground nutmeg1-1/2 cups fat-free milk1 tablespoon grated Parmesan cheese1/4 teaspoon paprika

Preparation

Sprinkle spinach in a 13-in. x 9-in. baking dish coated with cooking spray. Top with fillets.

In a large saucepan, saute onion in butter until tender. Stir in flour, salt, pepper and nutmeg until blended. Gradually add milk. bring to a boil; cook and stir for 2 minutes or until thickened.

Pour over fillets; sprinkle with Parmesan cheese and paprika. Bake, uncovered, at 350° for 20 minutes or until fish flakes easily with a fork.
