Ingredients

2 1/2 c. unbleached all-purpose flour

1 tsp. kosher salt

2 tbsp. granulated sugar

8 tbsp. unsalted butter

6 tbsp. lard or shortening

1/2 c. ice water

Preparation

Step 1Combine flour, salt, and sugar on a work surface or in a large bowl. Use a pastry blender or your fingers to work in butter and lard until the mixture forms coarse crumbs. Using a fork, stir in the water until the mixture mostly pulls together. Use hands to pat dough into a disc, wrap with plastic and refrigerate at least 1 hour before rolling.Step 2Gently roll out dough and press into a 9-inch pie pan.
