Ingredients

1 tablespoon canola oil1/2 cup chopped onion1/4 cup chopped sweet red pepper1 jalapeno pepper, seeded and chopped8 bacon strips, cooked and crumbled8 large eggs, lightly beaten1 cup shredded cheddar cheese, divided1/2 teaspoon salt1/8 teaspoon pepperSalsa

Preparation

In a large cast-iron or other heavy skillet, heat oil over medium-high heat. Add onion and peppers; cook and stir until tender, 3-5 minutes. Sprinkle with bacon. Pour eggs over the top; sprinkle with 1/2 cup cheese, salt and pepper. Cook over medium heat, stirring occasionally, until eggs are completely set. Sprinkle with remaining cheese. Serve with salsa.
