Ingredients

1 medium sweet red pepper, chopped1 medium sweet yellow pepper, chopped1 medium tomato, seeded and chopped1 medium cucumber, seeded and chopped1 small zucchini, chopped2 green onions, chopped2 tablespoons minced fresh parsley2 tablespoons olive oil1 tablespoon red wine vinegar1/2 teaspoon sugar1/4 teaspoon salt1/4 teaspoon pepper1 large ripe avocado, peeled and chopped1 tablespoon lemon juice

Preparation

In a large bowl, combine the first 7 ingredients. In a small bowl, whisk the oil, vinegar, sugar, salt and pepper. Drizzle over vegetables and toss to coat. Toss avocado with lemon juice; gently fold into salad. Serve with a slotted spoon.
