Ingredients

6 ounces uncooked fettuccine1 small green pepper, chopped1 small onion, chopped1 tablespoon olive oil2 cups garden-style pasta sauce1 can (15 ounces) black beans, rinsed and drained2 tablespoons minced fresh basil or 2 teaspoons dried basil1 teaspoon dried oregano1/2 teaspoon fennel seed1/4 teaspoon garlic salt1 cup shredded part-skim mozzarella cheeseAdditional chopped fresh basil, optional

Preparation

Cook fettuccine according to package directions. Meanwhile, in a large saucepan, saute green pepper and onion in oil until tender. Stir in the pasta sauce, black beans and seasonings.

Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Drain fettuccine. Top with sauce and sprinkle with cheese. If desired, top with chopped fresh basil.
