Ingredients

2 cups fresh broccoli florets2 cups fresh cauliflowerets1 medium cucumber, halved and thinly sliced1 cup sliced fresh mushrooms1 cup cherry tomatoes, halved1/3 cup finely chopped red onion1/2 cup fat-free Italian salad dressing

Preparation

In a large bowl, combine the broccoli, cauliflower, cucumber, mushrooms, tomatoes and onion. Add dressing and toss to coat. Cover and refrigerate for 8 hours or overnight.
