Ingredients

1 medium yellow summer squash, cut into 1/4-inch slices1 medium zucchini, cut into 1/4-inch slices1-1/2 teaspoons olive oil1/4 cup grape tomatoes1 garlic clove, minced1/4 cup shredded part-skim mozzarella cheese1 tablespoon minced fresh basil or 1 teaspoon dried basilDash salt1 tablespoon grated Parmesan cheese

Preparation

In a large skillet, saute squash and zucchini in oil until crisp-tender. Add tomatoes and garlic; cook 1 minute longer. Remove from the heat. Stir in the mozzarella, basil and salt. Sprinkle with Parmesan cheese.
