Ingredients

1 can (16 ounces) kidney beans, rinsed and drained2 cans (7 ounces each) white or shoepeg corn, drained1 large zucchini, chopped1 medium cucumber, chopped1 large tomato, chopped1 large green pepper, chopped1 medium red onion, chopped6 green onions, chopped1 can (3.8 ounces) sliced ripe olives, drained1 cup Catalina salad dressing1-1/2 cups shredded cheddar cheese1-1/2 cups corn chips

Preparation

In a large salad bowl, combine the first nine ingredients. Drizzle with dressing and toss to coat. Stir in cheese and corn chips. Serve immediately.
