Ingredients

3/4 c. white sesame seeds

3/4 c. black sesame seeds

1 c. poppy seeds

3/4 c. dried minced onions

3/4 c. dried minced garlic

1 tbsp. coarse sea salt

4 piece pieces tuna (see Tips & Techniques below)

Coarse salt to season

1 large egg white

Canola oil for deep frying

soy sauce

wasabi paste

Steamed rice

Preparation

Step 1Combine white and black sesame seeds, poppy seeds, onions, garlic, and salt in a jar and mix well. Store mix in a glass jar out of direct light.Step 2Season tuna with salt.Step 3Beat egg white in a shallow bowl until frothy. Pour about 1 cup crust mixture onto a plate.Step 4Dip each piece of tuna into egg white and let excess drip off, then coat fish on all sides with crust mixture, patting it to make sure it adheres. Put tuna on a rack set over a plate or baking sheet and refrigerate while you heat oil.Step 5Pour about 3 inches oil into a large, deep saucepan and heat it to 365 degrees F. Fry tuna 1 piece at a time (if you do more, oil temperature will drop too far and too quickly) until dried onions brown, about 1 minute to 1 minute and 15 seconds. Drain fish on a rack.Step 6Cut each portion into slices about 1/3-inch thick, and serve with soy sauce, wasabi paste, and steamed rice.
