Ingredients

1 medium onion, chopped1 medium carrot, chopped2 garlic cloves, minced2 tablespoons olive oil4 cups reduced-sodium beef broth1 can (16 ounces) fat-free refried beans2 cans (15-1/2 ounces each) great northern beans, rinsed and drained1-1/3 cups cubed fully cooked lean ham1 teaspoon dried parsley flakes1 teaspoon ground cumin1 teaspoon chili powder1/4 teaspoon pepper2 medium tomatoes, chopped

Preparation

In a large saucepan, saute the onion, carrot and garlic in oil until tender. Stir in broth and refried beans; whisk until smooth. Stir in the beans, ham, parsley, cumin, chili powder and pepper. Bring to a boil. Reduce heat; cover and simmer for 15 minutes. Stir in the tomatoes and heat through.
