Ingredients

2-1/4 cups all-purpose flour2-1/2 teaspoons baking powder1/2 teaspoon salt1/2 teaspoon ground cinnamon1/2 teaspoon ground nutmeg2 large eggs, room temperature1 cup eggnog3/4 cup sugar1/2 cup butter, melted2 teaspoons vanilla extract2 teaspoons rum extract

Preparation

Preheat oven to 350°. In a large bowl, combine the flour, baking powder, salt, cinnamon and nutmeg. In another bowl, beat the eggs, eggnog, sugar, butter and extracts; stir into dry ingredients just until moistened.

Pour into 3 greased 5-3/4x3x2-in. loaf pans. Bake until a toothpick inserted in the center comes out clean, 30-35 minutes. Cool 10 minutes before removing from pans to wire racks.
