Ingredients

1 cup packed brown sugar1 cup water1 cup raisins1/3 cup shortening1 teaspoon ground cinnamon1/2 teaspoon ground cloves1/4 teaspoon ground nutmeg2 cups all-purpose flour1 teaspoon baking powder1 teaspoon baking soda1/2 teaspoon salt

Preparation

In a heavy saucepan, combine first seven ingredients. Bring to a boil. Cook for 5 minutes, stirring occasionally. Cool to room temperature.

In a large bowl, combine the flour, baking powder, baking soda and salt; add the raisin mixture. Pour into a greased 9x5-in. loaf pan.

Bake at 350° for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. Serve with Hard Sauce (also found in Recipe Finder) if desired.
