1 package (16 ounces) frozen shelled edamame, thawed1/2 cup tahini1/2 cup water1/3 to 1/2 cup lemon juice2 garlic cloves, minced1 teaspoon sea salt1/4 cup olive oil1/4 cup minced fresh mint2 jalapeno peppers, seeded and choppedAssorted fresh vegetablesRice crackers
Preparation
Microwave edamame, covered, on high until tender, 2-3 minutes. Transfer to a food processor; add the next 8 ingredients. Process until smooth, 1-2 minutes. Serve with assorted fresh vegetables and rice crackers.
