1 1/2 c. all-purpose flour
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. kosher salt
1/2 c. (1 stick) unsalted butter, melted, cooled slightly
1 c. sugar
1 tsp. pure vanilla extract
1 egg plus 1 egg yolk
1 1/2 c. grated zucchini (about 1 medium zucchini)
Preparation
Step 1Preheat oven to 350°. Grease an 9”-x-5” loaf pan with cooking spray, line with parchment, then lightly grease again. Step 2In a large bowl, whisk together flour, cinnamon, nutmeg, baking soda, baking powder, and salt.Step 3In another large bowl, stir together melted butter, sugar, and vanilla. Mix in egg and egg yolk, then fold in zucchini. Fold wet ingredients into flour mixture until completely incorporated. Step 4Transfer mixture to prepared pan and bake until a toothpick comes out clean, 45 to 48 minutes. Step 5Let cool slightly in pan, then transfer loaf to a wire rack to let cool completely.
