Ingredients
8 large peaches, pit removed and thinly sliced
1 c. granulated sugar, divided
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1 tsp. kosher salt, divided
Juice of 1/2 lemon
1 1/2 c. all-purpose flour
1 tsp. baking soda
1/2 c. (1 stick) butter, melted
1/2 c. buttermilk
Coarse sugar, for sprinkling
Vanilla ice cream, for serving
Preparation
Step 1Preheat oven to 350°. In a large bowl, combine peaches, 1/4 cup sugar, cinnamon, ginger, 1/2 teaspoon salt, and lemon juice. Step 2In another large bowl, whisk together flour, remaining 3/4 cup sugar, baking soda, and remaining 1/2 teaspoon salt. Add melted butter and buttermilk and whisk to combine. Step 3Pour peaches into a large baking dish and spread batter on top, then sprinkle with coarse sugar. Step 4Bake until golden and bubbling, 40 to 45 minutes. Step 5Let cool 10 minutes before serving with ice cream.
Want to use frozen peaches? Go for it! Just thaw them first, then drain the excess liquid. Want to freeze your cobbler? You can! You can preparer the filling and place in a freezer safe bag to freeze for a up to 3 months. When ready to bake, thaw the filling, place in your baking dish and make your crust to top and bake. You can also freeze the whole cobbler after baking. Let is cool completely and cover with a tight lid. Let it thaw out at room temperature. You can reheat in the oven after thawing to rewarm the topping and fruit, just a reminder to never go from freezer straight to the oven! You can risk cracking your baking dish.
