Ingredients

1 medium red onion: one half sliced; the other finely chopped

2 tbsp. vinegar, such as apple cider, red, or white wine

Kosher salt

2 tbsp. butter

8 oz. oyster mushrooms, finely chopped

2 tsp. fresh thyme leaves, plus more for garnish

Freshly ground black pepper

1 (15-oz.) can cannellini beans, rinsed and drained

4 thick slices bread, such as sourdough

Sliced Swiss cheese 

Preparation

If meal prep is your goal, let your mixture cool after step 2, pack up the mixture in a resealable container, and refrigerate. When it’s lunchtime, proceed to step 3!Depending on your size of your bread, you may be able to stretch the mushroom mixture to cover up to 6 slices of toast.The earthy, slightly peppery flavor of oyster mushrooms is particularly delicious in this recipe, but feel free to swap in your favorite mushroom—whatever you have will work just fine!

Step 1Place the onion slices in a small bowl. Add vinegar and a pinch of salt, and toss to combine.Step 2In a large skillet over medium heat, melt the butter. Add the mushrooms, chopped onions, and thyme, and season with salt and pepper. Cook, stirring occasionally, until mushrooms have lost most of their moisture, about 8 minutes. Remove from the heat and stir in the beans.Step 3Preheat oven broiler to high. Place bread slices onto a sheet tray, and toast under broiler until lightly golden on both sides, about 1 to 2 minutes per side. (This can also be done in a toaster oven.)Step 4Divide the bean mixture between toasts, spreading in an even layer. Cover each toast completely with slices of Swiss cheese. Broil until the cheese is melted and slightly golden, about 1 to 4 minutes depending on the strength of your broiler.Step 5Serve topped with pickled onion slices and more fresh thyme leaves.
