Ingredients

2 lb. Yukon gold potatoes, peeled and cut into 1 ½” to 2” pieces

3/4 c. whole milk

4 tbsp. butter

2 tbsp. sour cream

2 tsp. kosher salt

Freshly ground black pepper

Sliced chives, for garnish

Preparation

Step 1Add potatoes to a large bowl and cover tightly with plastic wrap. Make a few vents in the plastic wrap with a fork.Step 2Microwave on high for 8 ½ to 10 minutes, or until the potatoes are tender and can be easily pierced with a fork. Mash potatoes with a masher or by running through a ricer; return to the bowl.Step 3Add milk, butter, sour cream, and salt. Microwave for an additional 15 to 25 seconds, just until the milk is warm and the butter is softened.Step 4Fold everything together, season to taste with salt and pepper, and garnish with chives.

The microwave cooks the potatoes evenly and, when processed through a ricer, are just as fluffy as those made in boiling water. Additionally, boiling potatoes can actually cause some of their flavor to be leached into the water. Steaming in the microwave allows you to retain much more potato-y goodness and requires less effort. Once they’re steamed, you can continue with your family recipe for potatoes, but we also included instructions on how to finish off these rich, buttery spuds. Like cooking in the microwave?
