Ingredients
1/2 cup cornmeal1/2 cup all-purpose flour1 teaspoon sugar1/2 teaspoon salt1/4 teaspoon baking powder1/4 teaspoon baking soda1/4 teaspoon garlic powder1/2 cup cream-style corn1/4 cup egg substitute1/4 cup reduced-fat cheddar cheese1/4 cup fat-free milk2 tablespoons chopped green onion1 tablespoon butter, melted2 teaspoons chopped seeded jalapeno pepper
Preparation
In a large bowl, combine the first seven ingredients. Combine the corn, egg substitute, cheese, milk, onion, butter and jalapeno. Stir into dry ingredients just until moistened.
Pour into an 8-in. square baking dish coated with cooking spray. Bake at 425° for 12-14 minutes or until a toothpick inserted in the center comes out clean. Cut into squares; serve warm.
