Ingredients
1/2 cup plus 1 tablespoon lemon juice6 tablespoons olive oil3 tablespoons minced fresh parsley3 tablespoons grated lemon zest1-1/2 teaspoons minced garlic3/4 teaspoon salt3/4 teaspoon dried thyme3/4 teaspoon dried marjoram3/4 teaspoon pepper6 boneless skinless chicken breast halves (6 ounces each)
Preparation
In a small bowl, combine the first nine ingredients. Pour 1/3 cup marinade into a large resealable plastic bag; add the chicken. Seal bag and turn to coat; refrigerate for up to 1 hour. Cover and refrigerate remaining marinade.
Drain and discard marinade. Grill chicken, covered, over medium heat for 5-7 minutes on each side or until a thermometer reads 165°, basting occasionally with reserved marinade.
