I know what you’re thinking: Cinnamon is cinnamon! What is “flavorful” cinnamon?? Believe it or not, there are actually many, many different kinds of cinnamon on the market. Ceylon cinnamon is “true cinnamon,” and it has a milder, more floral taste than other varieties. Most pre-ground stuff you find in your average supermarket is probably a type of cassia cinnamon: This group of cinnamon tends to be stronger, spicier, and more earthy and granular. My favorite way to use cinnamon sugar is to sprinkle it onto generously buttered toast. You can also use it in a variety of baking projects, like our super-popular snickerdoodle blondies, or in your morning oatmeal to add a little warm spice and sweetness to each bite.
