Ingredients

1 pound ground beef1 large onion, chopped2 cans (16 ounces each) kidney beans, rinsed and drained2 cans (14-1/2 ounces each) diced tomatoes, undrained1 celery rib, diced1 teaspoon salt1 teaspoon pepper1/2 teaspoon chili powder1/4 to 1/2 teaspoon crushed red pepper flakesOptional: Shredded cheddar cheese, sour cream, and green onions

Preparation

In a large saucepan, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer until flavors are blended, about 30 minutes. Top with shredded cheese, sour cream, and green onions, if desired.
