Ingredients
1/2 cup mashed potatoes (made with milk and butter)1/4 cup sugar1 large egg, lightly beaten1/2 cup sour cream1/2 teaspoon vanilla extract1-1/2 cups all-purpose flour1/2 teaspoon baking soda1/4 teaspoon baking powderOil for deep-fat fryingOptional: Additional sugar or confectioners’ sugar
Preparation
In a large bowl, combine potatoes, sugar, egg, sour cream and vanilla. Combine next 3 ingredients; stir in potato mixture.
Heat oil in an electric skillet or deep-fat fryer to 375°. Drop batter by teaspoonfuls, a few at a time, into hot oil. Fry until golden brown on both sides. Drain on paper towels. If desired, roll in sugar while warm.
