Ingredients

1 cup cornmeal1 cup self-rising flour1-1/2 teaspoons baking powder1/2 teaspoon salt1 large onion, chopped2 jalapeno peppers, seeded and diced1/4 cup sugar1 large egg1 cup buttermilkCanola oil

Preparation

In a large bowl, combine the first 7 ingredients. Add egg and buttermilk; stir just until moistened. Set aside at room temperature for 30 minutes. Do not stir again.

In an electric skillet or deep fryer, heat 2-3 in. of oil to 375°. Drop batter by rounded tablespoonfuls, a few at a time, into hot oil. Fry until golden brown, about 1-1/2 minutes on each side. Drain on paper towels.
